Air Canada serves authentic Japanese inflight meals in the Signature Class in collaboration with Micheline Star chef

Air Canada has started serving authentic Japanese inflight meals overseen by Micheline Star chef Masaki Hashimoto in the the Signature Class on the Japan-Canada routes since March 2025. With the new service, the airline intends to offer higher value to the business class passengers as one of the corporate efforts to raise customer satisfactions.

Hashimoto is an owner chef of Toronto-based ‘Kaiseki Yu-zen Hashimoto.’ This is the third Air Canada’s collaboration with famous chef, following French and Indian meals. 

Mark Nasr, Air Canada's Executive Vice President, Marketing and Digital and Aeroplan President explained that the airline continues upgrading inflight services, such as seats, meals or Wi-Fi. He added that inflight meals are particularly necessary passenger experience to upgrade service quality. 

Kiyo Weiss, Air Canada's passenger sales in Asia Pacific, said that Japan is an important hub for passengers between Canada and Asian cities, as well as for Japanese passengers to fly to U.S. via Canada. Under the situation, she stressed that the authentic Japanese meals can meet passengers’ expectations.

The new meal is served with six sorts of kaiseki cuisine together with sake, and the airline will begin collaborating ‘Noritake,’ a prestigious Japanese tableware brand in this spring.
